I think that I finally figured out my light problem in the photos. Basically, I need to get stop trying to edit in Microsoft Photo Editor and use a real program. I have been uploading my pics into Picasa and adjusting the light and contrast there and Wow, what a difference!

And, speaking of better, I made up the most amazing gluten free pancake recipe that I have ever had! Every bit as fluffy as what comes out of a Bisquick box! It is a bit time intensive because it calls for sourdough starter. But for anyone on a gluten free diet, it is soooooo worth it! This is my original recipe, if you use it and blog about it, please throw some love back my way :-)
Sourdough Teff Pancakes
1 Cup Teff flour
1 Cup milk (mine was coconut milk)
* 1 Cup Sourdough Starter
2 Tablespoons Baking Powder
1 Tablespoon Sugar
2 Eggs
Coupla shakes of salt
Oil or butter for pan
Preheat pan or griddle on medium to medium low heat. Combine dry ingredients in a large bowl. In a smaller bowl, mix the milk and eggs, beat together. Add to the dry ingredients and add sourdough starter. Mix until combined (do not overmix). Cook in a little butter or oil, turn pancakes over when the top is bubbled.
* I found my sourdough starter recipe on www.allrecipes.com. Follow the directions, substituting the all purpose flour with gluten free all purpose flour. It works like a charm ;-)
The pancakes were fairly heavy but were oh, so fluffy! I topped them with sauteed bananas and coconut. I just sliced some very ripe burro bananas, sauteed them in olive oil and added some grated coconut. Let cook until browned and soft.
