The Best Pumpkin Soup Recipe

Hi Everyone!

     I haven't taken much time to discuss food or diets on this blog yet. I am a (most of the time) follower of the Paleo, or Caveman, diet. And, I found this delicious soup recipe on Caveman Food. It is so, super easy and yummy. I served this soup at a potluck and everyone loved it. No one guessed that it is non-dairy and "diet food". I made it with canned pumpkin, if you would like to make it with unprocessed pumpkin, the instructions are here. I am definitely thinking of making this again for Thanksgiving.

PUMPKIN SAUSAGE SOUP
serves 6

ingredients:
1-1.25 lbs bulk breakfast sausage
1/2 a large onion, minced
1/2 cup mushrooms, sliced
one 15-oz can of pumpkin
4 cups chicken stock
1 tsp dried oregano
1 tsp dried thyme
pinch of dried rosemary
1 tsp paprika
pinch of red pepper flakes
1 tsp sea salt or to taste
2 T butter or some other more paleo cooking fat
1/2 cup coconut milk

Heat the butter in a heavy deep pot and saute the mushrooms over medium-high heat until golden. Remove from the pot to a small bowl, leaving the butter. Add the onions to the pot and saute them until golden, then remove them to a separate bowl. Add the sausage to the pot and brown it until it is cooked through and looks tasty. Add in all the remaining ingredients except the coconut milk (don't forget to add in the cooked mushrooms and sausage!), and simmer for 20 minutes. Remove from the heat and stir in the coconut milk.

You could also cook this in a crockpot for several hours on low or about 2 hours on high, after sauteing the mushrooms and onions and browning the sausage.

I'm not familiar with the caveman diet, but if this soup is any indicator, it sounds awesome! We're trying to live by the Nourishing Traditions cookbook, but it's hard for me to stay on track.

I'll have to look at that cookbook, I haven't heard of it. Its been easy to stay on it because I am allergic to most of the foods not allowed anyway...and, yes, the soup is delish! I was having some for lunch and thought it was too good not to post about.

I try not to eat much dairy and this soup looks delish. Can't wait to try it - will have to go buy some coconut milk.
