Best Fail Ever!

  Hey Everyone!

     I had a crazy bit of a craving for ice cream bars this weekend. Since I am allergic to dairy I used my trusty ice cream maker to whip up some coconut ice cream, vanilla style. Here is the recipe, which I had gotten from Allrecipes.com:

1 can coconut milk
1/3 cup sugar

How easy is that, right???? I doubled the recipe and added about 2 teaspoons of vanilla as I put this into the blender. I then poured it into my ice cream maker and let 'er rip. When it was finished (I could tell when it was done when my ice cream maker's motor sounded like it was working way harder than it should) I packed some into popsicle molds and let freeze for several hours (overnight in my case). When it was sufficiently frozen and removed from the molds I melted a bag of chocolate chips. Bad idea. It all melted very nicely and covered the first pop really well. After that, the chocolate kept sliding off the ice cream and it hardened back up, even though it was still heated in the double boiler, over boiling water. I soon gave up and dumped a bunch of coconut into the chocolate and mixed. Lol, I tried again, seeing if this mixture would work. It sort of worked, I covered several ice cream balls that I had made and put everything back into the freezer. When I checked on it later, the ice cream had melted out of the chocolate. Turns out that the chocolate/coconut mixture was so thick it stayed hot over the ice cream and melted it even though everything was in the freezer. Bummer. I picked one up and tried it.

Most delicious fail ever.

I plan to try this again, using meltable chocolate from Trader Joe's. But until then I will be enjoying my frozen chocolate and coconut "bon bons".

Gotta try this! We have 5 kids and 2 have dairy allergies. Soy ice cream gets pricey so I may give this a go!

HI Christine, I also find that chocolate can be so temperamental! I adore coconut icecream with chocolate as well and it is fun to taste it even if it does not come out perfectly. Looks delicious! I happened upon your blog today while hopping around-do you have any other dairy free recipes? My son has a rare metabolic disease, and I would love to find some new recipes that are dairy and bean free!!
