Cooking With a Ceramic Bean Pot

Hi Everyone!

     Living in California it is easy to be exposed to cuisines of many types. I regularly eat japanese, vietnamese and American foods. Something I haven't been able to have lately is Mexican. Since my discovery of multiple food allergies, mexican is no longer safe. Lucky for me, I found an authentic clay Mexican bean pot on Friday. I have only heard of this once before, when a friend made the most amazing beans in her pot. For only $14.99 I thought it was well worth it to try out this pot.

     This pot must be seasoned before the first use. To do this just fill it with lukewarm water, put it over a flame and boil the water for 5 minutes. Let the pot cool then pour the water out. Ready to go! I had soaked a small bag of red beans overnight and today I added enough water to cover plus another inch and then cooked on the side burner of my gas grill. I have an electric stove. It is not recommended to put this pot directly onto an electric burner so for me, the grill stove is the way to go. I think that next time I will use more water. Even so, these beans are delish!! I added no spices, only a few jalapeno pieces from a jar.




     Something else I made this weekend - Chocolate coconut ice cream! Major yum! Dairy is one of the things that I am allergic to and I have missed ice cream. I hauled out my trusty ice cream maker and found this recipe on the net. Check out Savory Sweet Life for the recipe. You will not be sorry!
